The world is an imperfect place, but there are certain corners of it that seem to exist as escapes; they aren’t laughing in the face of other people’s struggles of course, but they do keep bad vibes and serious matters somewhat at bay. One such place is Rincon, considered the best beach in Puerto Rico. Here, time stands still and troubles become far away. Tensions are eased, and responsibilities are simply put away for another day. Having a home base as appealing as the island itself – a getaway within a getaway, if you will – will add to this already noteworthy event. Tembleque de Coco



I want to share with you a classic Puerto Rican desert recipe. This one is a treat, it is light coconut custard that shakes like Jell-O. That is why it’s called tembleque, which can be loosely translated as jiggling. Here is the recipe:

o 2 cups of coconut milk

o ? cup of cornstarch

o ? cups of sugar

o ? teaspoon of salt

o 1 teaspoon vanilla flavoring

o Ground cinnamon (optional)

In a saucepan, at medium hi, heat the coconut milk, the sugar and the salt. Dilute the cornstarch with some of the coconut milk and add to the saucepan. Stir continuously until it boils then simmer until it thickens. Pour mixture into a mold or single serving cups whatever you prefer. Let it cool to room temperature before refrigerating for at least 2 hours. Sprinkle cinnamon over it before serving.

Here are some tips to watch out for on this dish. Cool the mixture before refrigerating or cover it with a plastic wrap so a skin does not develop, much like pudding. In addition, before serving you might have to separate the tembleque from the mold with a knife. While cooking once the mix thickens remove immediately from the heat or you will get a tembleque without the jiggle that is more bread pudding than jell-o in consistency.

When families, couples or singles start to plan a vacation in the Caribbean, Puerto Rico comes to mind in the first place.?

Getting there

Puerto Rico is the most visited island in the Caribbean, and also the easiest one to get to. Flights arrive to San Juan, the lovely capital, from all over the United States, Canada, Europe, as well as from Central and South America and the Caribbean Islands.?

Weather?

The weather in Puerto Rico is tropical, so it is never cold. I would say that is also not so hot, because the constant breezes alleviate the hot temperatures by several degrees. The rains are tropical, so it rains and stops soon; you can continue with your plans for visits and beach days.

Attractions?

One of the most important attractions is the spectacular beaches that line the coast around the island.??

But, different than the smaller islands in Puerto Rico you will find much more than just beaches. You will be able to go to the beach in the morning, to a rainforest in the afternoon and enjoy the impressive nightlife of San Juan including spectacular shows and casino.?

To mention a few of the great beaches of Puerto Rico, I would like to start with Luquillo Beach, in my opinion the most important of them all. Located on the northeastern coast of the island about 1 hour drive from San Juan this beach is adored by locals and tourists alike. You will find here not only a great white sand with crystal clear waters, but also lots of shade under the coconut palm trees and all the facilities required for a great day at the beach like Showers, bathrooms, food stands, drinks and more.?

The other area of beaches that have become a must for visitors is the west coast called Porta del Sol. Here the main attraction is the beaches of Rincon where the waters of the Caribbean meeting the Atlantic are rough and idyllic for Surfing. This area has been called by many magazines the Maui of the Caribbean. Surfers from all over the world flock to Porta del Sol for the greatest surfing in the Caribbean.?

The towns on the Central Mountains?

As mentioned, the visit of Puerto Rico is not only for beach lovers and great resorts that abound there. A visit to the interior of the island will be a great experience due to the beauty of the land which is awe inspiring. The central mountains are populated by small towns where you may find attractions from Sugar Cane Plantations to Coffee growers as well as intricate subterranean caves.?

In the towns you will experience the 400 years of Spanish heritage seen in the architecture and the beautiful Town Plazas that you can find in each town without exceptions.?

Old San Juan?

And last but not least, Old San Juan, the flagrant walled city that has been maintained and refurbished to look exactly as it was built by the Spanish,? the British and others that left their mark on this beautiful city.?

Old San Juan is a peninsula and to get there you have to border the Atlantic Ocean, which by itself is a great experience. But once you arrive to Plaza Colon with the old Tapia Theater across the street and start strolling along up Fortaleza Street is when you realize you have arrived to one of the most beautiful colonial cities in the Americas.?

There are endless of possibilities for accommodation in Puerto Rico. You will find anything you like or your budget allows, from the inexpensive Guest House to the most luxurious resorts like El Conquistador or the Ritz Carlton.?

I hope you will enjoy your stay in Puerto Rico. My stay there was for 28 years, before we moved to Florida. Those were the most beautiful years of my life together with my wife and children.
